You should focus on breakfast and lunch, then around three or four in the afternoon, you can basically close the shop since fewer people buy buns then. Unless they’re buying buns for the next day’s breakfast, but with the weather getting hotter and no fridge, they won’t buy much. So in the afternoon, you can reduce the bun production. It’s better to run out than to make too much." Cheng Su said.
